Cinnamon rolls are American to the core, but the dough underneath them is German. Cinnabon-style rolls are built on an enriched yeast dough — milk, butter, egg — that a German baker would recognize instantly as Hefeteig, the same base used for everything from Streuselkuchen to sweet braids.

What makes a copycat version convincing is the filling and the finish. The filling wants brown sugar and enough soft butter to turn into a caramel as it bakes, and the frosting needs cream cheese for the tang that cuts the sweetness. Bake them touching in the pan so the sides stay soft, and pull them a shade early — a cinnamon roll baked to golden is already dry.

Baked these for the first time and wow, they’re so delicious! Really soft and not dry at all. This is how cinnamon rolls should taste, even for me.

      Thank you so much, Barbara.

I’d been searching for a while for an alternative to the American “originals” too, and these are really so fluffy and light.

      Have a lovely weekend.
