Sunday rolls are a German institution: someone walks to the bakery before the rest of the house is awake and comes back with a paper bag of warm Brötchen. In most of the US that walk does not exist, which is the entire argument for baking them yourself.

The crust is the hard part at home. Bakery rolls get steam injection; a home oven does not, so a pan of boiling water on the bottom rack for the first ten minutes is what gives you the thin, crackling crust instead of a soft top. Score them properly and bake hot — 450°F — and they will come out closer to the real thing than you expect.
