The best wholemeal spelt rolls recipe for delicious dark rolls that are quick to make and simply taste great. Not too crispy, but fluffy, soft and very aromatic, these wholemeal rolls taste great not only at breakfast, but also in the evening as a side dish on a plate of bread with oil, butter or herb butter.

Spelt is having a real moment in American kitchens, and these dark wholemeal rolls are the easiest way in. Spelt (Dinkel in German) is an ancient wheat relative with a nuttier, slightly sweet flavor and gluten that behaves differently — it hydrates fast and gets slack if you overwork it, so a shorter knead gives a better roll.

You will find whole spelt flour in most US health food aisles and from mills like Bob’s Red Mill. If you can only find white spelt, use two thirds spelt and one third whole wheat to get the same dark color and depth. These are the everyday rolls on a German breakfast table — split, buttered, topped with cheese or jam. More in our collection of German recipes.

Delicious wholemeal spelt roll recipe for healthy bread rolls

Wherever wholemeal flour is used, it is healthier for the body than pure white flour. Even if it is best to avoid carbohydrates from flour products almost completely, I cannot and do not want to do without them completely.

Our alternative is to use more wholemeal flour than white flour. Thanks to the fibre and vitamins contained in the husk, which is also processed here, the body can do much more with a wholemeal bread than with a pure wheat flour product.

You automatically feel a touch less guilty when you can enjoy the delicious dark bread rolls. There is hardly anything better than the smell of freshly baked bread rolls that taste super delicious.

Bake wholemeal bread rolls or baguettes

While we often alternate between dark bread and dark bread rolls, this dough is also very suitable for a baguette. This goes even better with a nice barbecue evening with friends. It’s quicker to reach for a slice of baguette than to eat another whole bread roll.

Dark baguettes are also pretty and easy to look at on the table. If you want to bake even darker baguettes, only use wholemeal flour for the recipe.

Soft wholemeal spelt rolls recipe

Wholemeal doesn’t always have to be hard, dry and crumbly. I myself still have the cliché in my head about organic and wholemeal that it is always dry and dull. I now know that there are so many great recipes where it can be super tasty, fresh, flavoursome and soft afterwards.

That’s why I’ve found the best wholemeal spelt roll recipe for me, which is perfect for soft bread rolls. I admit, hard bread rolls fill me up faster, but soft ones give me much more “feelings of happiness”.

Favourite recipe for dark wholemeal spelt rolls

Spelt is an original form of modern wheat and is characterised by its high nutrient content. Compared to conventional wheat, spelt contains more protein, fibre, vitamins and minerals. Fibre in particular is important for healthy digestion and long-lasting satiety.

However, spelt contains more gluten than wheat, which should be taken into consideration for people with gluten intolerance. However, the gluten is a slightly more easily digestible gluten than in wheat flour.

Wholemeal flour offers a wealth of vitamins, minerals and antioxidants. It is therefore an excellent choice for a balanced diet and can help to reduce the risk of various diseases.

Tips and variations for your wholemeal spelt rolls

Before the wholemeal rolls go into the oven, I would like to give you a few additional tips to get the best out of the wholemeal spelt rolls and vary them to suit your individual taste.

  1. Use fresh wholemeal spelt flour: Fresh flour ensures a better baking result. Make sure you use high-quality wholemeal spelt flour to retain the full flavour and nutrients.
  2. Experiment with flavours: you can add different flavours to the wholemeal spelt rolls to make them even more interesting. For example, you can add fresh herbs such as rosemary or thyme, or finely chopped dried fruit for a sweet flavour. You can add various grains such as sesame seeds, sunflower seeds, linseed and chia seeds to the dough or as a topping on the bread rolls.
  3. Try different shapes: Instead of classic bread rolls, you can also make small loaves or long baguettes from the dough. Of course, you can also mix and form a small loaf and small mini bread rolls. Perfect for guests and as a gift for parties.
  4. Freeze for later: Wholemeal spelt rolls are great for freezing. It’s best to bake a larger quantity and freeze the remaining bread rolls. So you always have fresh bread rolls to hand when you need them.
  5. Enjoy them in a variety of ways: wholemeal spelt rolls not only taste great with cold cuts and jam for breakfast, they are also an excellent accompaniment to soups and salads or an easy snack between meals.

Flavour of wholemeal spelt rolls

The recipe for my dark bread rolls is easy and simple. It is also made from healthy ingredients, but one thing is really important: the flavour. The slightly nutty flavour of the spelt flour gives the bread rolls a very special touch that you won’t find in conventional bread rolls.

Depending on the topping and additional flavourings, you can always vary the bread rolls a little and make them super versatile.

We always enjoy baking fresh bread, baguettes and bread rolls ourselves. You can change the recipe again and again and get really tasty baked goods as a result of the manual labour. It’s easy and fun to keep trying out new creations and shapes.

Great recipe! We tried your recipe last weekend and it worked out perfectly. We put a mix of poppy seeds and sesame on the rolls. Everything rose perfectly and turned out delicious and fresh. Not too hard or crusty, though the seeds didn’t stick to the rolls all that well for us, which wasn’t a problem for us at all. We’ll definitely be baking these again! Best wishes from Cologne!

      Dear Susanne,

thank you for your message. If the streusel didn’t stick well, you could try an egg-and-water wash and then sprinkle on the poppy seeds and sesame.

      Warm wishes to Cologne

Hi, does this work on a regular baking sheet too? I don’t have a perforated one ☹️

      Hi Jacqueline,

of course you can use a regular baking sheet – no problem at all. Depending on the sheet, I’d maybe put some parchment paper underneath. With perforated sheets, the rolls usually get a bit crispier on the bottom.

      Have fun baking!

I just finished baking the rolls. Since I didn’t have quite enough spelt flour (630), I topped off the rest with whole wheat flour. And I sprinkled them with chia and flax seeds. They’re nice and crunchy and delicious. I also went ahead and made a baguette for grilling this weekend.

I’ll definitely be making these more often.

      Hi Kathleen,

thank you so much for your kind feedback, and great idea to just fill in the rest with whole wheat flour.

Wishing you a lovely rest of the week and all the best,

      Vanessa
