Paris Rises Again: Three New Two-Star Tables in the 2026 French Guide
The Michelin Guide France 2026, unveiled on 16 March, brought a wave of new two-star restaurants, and Paris was firmly at the centre of it. Three of the capital's dining rooms climbed to the second tier, confirming a city that continues to reinvent its haute cuisine.
Hakuba, in the first arrondissement, was among the most talked-about promotions. A collaboration bringing together sushi mastery with the refined saucework and desserts of a celebrated pastry tradition, it pairs Japanese precision with French finesse. In the fifth arrondissement, the intimate Alliance, with just eight tables, won its second star for cooking described as disarmingly yet stunningly simple, built on impeccable seasonal produce.
The third of the trio, Virtus in the twelfth arrondissement, was recognised for meticulous seasonal cuisine, precise technique and aromatic sauces. Together the three restaurants reflect a Paris that is at once faithful to its classical roots and open to new voices, many of them shaped by Japanese chefs who have made the city their home.
Beyond Paris, the 2026 selection spread its two-star honours across the regions, from Champagne to Burgundy, while Les Morainières in Savoie took the evening's top prize with a third star. For lovers of French dining, the message was clear: the capital remains an essential stop, and its next generation is very much on the rise.
