Nestled in the prestigious Champs-Élysées quarter within the eighth arrondissement of Paris, Lasserre stands as a distinguished institution of French gastronomy. Founded in 1942 by René Lasserre, the establishment has long occupied a notable place in the capital's culinary landscape. Over the decades, its dining room has welcomed an illustrious clientele of artists, writers, and film icons, including André Malraux, Marc Chagall, Salvador Dalí, Romy Schneider, Audrey Hepburn, Jean-Claude Brialy, and Frédéric Dard. The cultural resonance of the venue is such that during a luncheon at Lasserre, Chagall was inspired to decide to paint the ceiling of the Opéra Garnier.

The culinary identity of the restaurant is rooted in classic French cuisine, defined by a succession of talented chefs who have guided its kitchens over the years. René Lasserre himself created several renowned signature dishes, including the orange-flavoured duck of Challans, the André-Malraux pigeon, truffle and foie gras macaroni, and the Élysées-Lasserre timbale. Following the founder's era, the kitchen was led between 2001 and 2010 by Jean-Louis Nomicos, a former chef of La Grande Cascade trained by Alain Ducasse. Nomicos was subsequently succeeded by Christophe Moret from the Plaza Athénée in 2010, and then by Michel Roth in 2016. Since September 2018, Nicolas Le Tirrand has held the position of chef, working alongside pastry chef Jean Lachenal to continue the restaurant's gastronomic tradition.

Beyond its plate, Lasserre is celebrated for its distinctive architectural features and refined atmosphere. The restaurant is particularly well known for its transparent roof, which allows diners to experience a unique sense of place within the heart of Paris. To maintain its sophisticated ambiance for contemporary guests, the inner room of the establishment was completely refurbished in 2017, blending historical charm with modern elegance to offer an enduringly graceful setting for fine dining.
