Fresh crunchy waffles without milk are always part of my diet as a cake substitute or lunch alternative. I have a few waffle recipes that I always love to bake and today I’m sharing with you my waffle recipe without milk for extra crunchy waffles with water.

Waffles without milk are useful well beyond dairy allergies — they are what you make when the fridge is empty on a Sunday. Water or plant milk changes the texture in a specific way: less browning, but a noticeably crunchier exterior, since milk sugars are what make a waffle soft as it cools.

German waffles are traditionally heart-shaped and thinner than the deep-pocketed Belgian waffles common in the US, so they crisp faster and are eaten with powdered sugar or cherries rather than drowned in syrup. If you use an American waffle iron, cut the batter slightly thicker. Serve them immediately — any waffle stacked on a plate steams itself soft within minutes.

Ingredients

  • 250 g all purpose flour
  • 150 g sugar
  • 140 g spreadable butter or margarine – soft
  • 2 tsp vanilla sugar
  • 1 tsp baking powder
  • 3 eggs
  • 100 ml water, still sparkling water for extra crunchy waffles

Instructions

  1. Mix flour, sugar, soft butter (not directly from the refrigerator), vanilla sugar, baking powder, eggs and water until the dough has become a nice mass.
  2. Pour batter into preheated waffle iron and leave in waffle iron for a few minutes, depending on browning preference.
  3. Remove finished waffles from waffle iron with a soft lifter and let cool slightly on a cooling rack.
  4. Serve waffles with powdered sugar, whipped cream, vanilla ice cream, hot cherries or other fruit.
Tip For even more flavor, you can use lemonade instead of sparkling water. This gives the waffles a little more zing.

Instructions for crunchy waffles without milk

First, mix flour, baking powder, sugar and vanilla sugar. Then add fluffy butter, alternatively you can use margarine.

Then add three medium eggs and 100ml of sparkling water. Now mix the dough in a food processor or blender.

In the meantime or even before you make the batter you can preheat the waffle iron. When the dough is a nice mass, the waffles can be put into the hot waffle iron.

However, you should grease the waffle iron in advance with a little butter, so that the finished waffle can loosen better.

I had for my waffles during my trip for my lifestyle blog a waffle iron with heart waffles and even small wooden sticks as a handle can use. When it comes to the right amount of batter, you just have to try a bit until you find the perfect amount for your particular shape. It’s best to start with a small amount of dough and then increase a bit. Usually a simple spoon is best for this.

After a few minutes, you can remove the waffles from the waffle iron and let them cool on a cooling rack. Do not use a fork to remove the waffles from the mold, as these can quickly scratch the waffle iron and damage the coating – a wooden lifter is very suitable.

Waffles without milk – crunchy waffles – simple recipe

Waffle batter is quickly prepared and can then be stored in the refrigerator until guests arrive or you want to bake waffles. Crunchy waffles without milk are therefore always thought quickly, because often fresh milk is missing and all other ingredients are usually anyway in the household.

I have tried many different waffle batter variations and show you today a tutorial for waffles without milk. In addition to the various recipes for Belgian waffles or extra thick waffles, it is increasingly important to offer waffles without milk and I have also already changed.

Many people always prefer to do without milk and there my waffles are of course absolutely in vogue. Waffles without milk at lactose intolerance and as a basic recipe for other ingredients and changes. I can still remember very well my first waffles without milk, a little crunchier than the known recipes, but after a short time this recipe became my favorite.

My favorite way to serve and eat my waffles is without milk, with powdered sugar and some fruit on the side. In the winter I love to serve hot cherries, cream or vanilla ice cream with them.

If you separate the egg whites in advance and beat them until stiff, you can also avoid using baking powder with the waffles. Instead of sparkling water you can also use still water, but then you should not do without baking powder if you want crunchy waffles.

If you replace the water completely with milk, quark, cream and other milk alternatives, the waffles become fluffier and lose their firmness. However, the additional fat also makes the waffles more flavorful again.

Waffles are a great alternative if you have spontaneous guests or want to prepare the dough in advance. The batter usually keeps for about 3 days if the eggs are fresh.

My tip: For additional more flavor, I personally like to take a little more sugar and often add some coconut flakes to the dough. Alternatively, you can replace the mineral water with an orange soda or lemonade.

Especially for people who do not drink or want to use milk, have a lactose intolerance or are looking for an alternative to simple regular waffle recipes, this recipe is a perfect alternative.

Finally, dairy-free waffles that actually taste good! So crispy — my favorite. Can you reheat them?

Thanks for your feedback, Vanessa. You can reheat the waffles anytime — I always pop them in the oven for a few minutes for this, ideally at 300°F on convection, and then they get nice and crispy again.

Wonderful without milk! Crispy and moist – a total hit. Does it work with almond milk?

Thank you, Claudia! Of course you can use almond milk instead of water – the waffles just won’t turn out quite as crispy, but the recipe generally works with different liquids. You may need to mix in a little extra flour if the waffles stay too soft.
