Gingerbread brownies are a German-American hybrid that makes complete sense once you taste it. Lebkuchen spice — cinnamon, clove, allspice, cardamom, a little anise — does for chocolate what it does for honey cake, adding warmth and length without reading as Christmas cookie.

The brownie base should stay fudgy, which means more chocolate and less flour than a cake-style recipe, and pulling the pan while the center is still soft. Lebkuchengewürz is sold in German delis and online in the US; pumpkin pie spice is not the same thing but gets you two thirds of the way there if you add ground clove and a pinch of anise.

Ingredients

  • Cake dough
  • 200 g all purpose flour
  • 200 g sugar
  • ¾ tsp baking powder
  • 1 ⅓ tsp baking soda
  • 100 g spreadable butter
  • 2 tbsp gingerbread spice
  • 2 tbsp baking cocoa
  • 2 tbsp honey
  • 3 eggs
  • 200 ml whole milk
  • Filling & Decoration
  • 150 g plum jam quantity and flavor variety may vary
  • 100 g chocolate chips (dark)
  • 5 g spreadable butter
  • 100 g walnuts

Instructions

  1. Melt butter in a larger saucepan on a stovetop.
  2. Add gingerbread spice, baking cocoa and honey and stir.
  3. Add eggs and milk and mix as well.
  4. Prepare a mixing bowl with flour, sugar, baking powder and baking soda and add the warm liquid chocolate spice mixture and mix.
  5. It is best to place the finished dough on a baking tray lined with baking paper and baking frame (approx. 20x30cm).
  6. Bake in oven preheated to 180 °C for about 20-25 minutes. Start 25 minutes timer here
  7. For the filling, the cake must cool a little, so that it can be cut once across and unfolded.
  8. Then spread the two sides with jam, depending on the amount you want, and fold them back together.
  9. Melt the chocolate and a little butter in a water bath and spread over the cake.
  10. Now spread walnuts (as whole pieces or chopped small) on the still liquid chocolate.
  11. Cut cake into small brownie pieces when cool and store best in a tin.
Tip For the winter brownies, the gingerbread spice fits perfectly. If you want to bake a summer version, it is better not to use any spice. Also recommended is a berry jam or orange marmalade. As decoration for the chocolate icing I recommend coconut flakes instead of nuts.

Instructions for making the brownies

Melt butter in a larger saucepan on a stovetop. Add gingerbread spice, baking cocoa and honey and stir to combine. Add eggs and milk and mix as well.

Delicious Christmas Brownies recipe

If you want to vary the chocolate brownies recipe a little you can of course add some cinnamon or omit the gingerbread spice after Christmas and use a little more baking cocoa. In our version, we put the chocolate frosting all over the cake and cut the cake into little brownie pieces before the chocolate had cooled. This creates a nice light chocolate glaze on each piece. If you like it even more chocolatey you can also cut small pieces first and then pour chocolate over each small brownie piece.

Through our decoration with walnuts, the brownies still get a golden shine, which just fits perfectly with noble cake plates and makes the brownies look even shinier.

The finished chocolate brownies taste really delicious and let a good Christmas mood arise. For us, the brownies are something very special and, in addition to the Christmas taste, a great memory of really nice hours in Hornbach.

True, this cake tastes especially good at Christmas. However, with a few small modifications, it also tastes good in the summer. You can sprinkle coconut flakes on the chocolate instead of nuts. With the jam one chooses then strawberry as taste. The gingerbread spice is omitted completely and you have a summery chocolate cake variant.

The chocolate brownies recipe tastes great without the special spices and even without jam at all. Juicy and chocolatey delicious. Have fun trying it out!
