Ingredients

  • 350 g bread flour
  • 125 g dark rye flour
  • 125 g whole grain spelt flour
  • 90 g walnuts chopped
  • 30 g sunflower seeds
  • 50 g oats, rolled
  • 14 g fine salt
  • 10 g honey
  • 14 g instant yeast
  • 440 g water, still lukewarm

Instructions

  1. Put all ingredients together in a food processor and knead intensively with a dough hook for about 6 minutes. Start 6 minutes timer here
  2. Now place the dark dough in a large glass bowl sprinkled with flour and sprinkle again with a little flour. Cover the glass bowl with cling film and let the dough rest in a warm place for at least 50 minutes until it has doubled in size. Start 50 minutes timer here
  3. Preheat the oven to 200 °C, forming either a large loaf - alternatively form smaller baguette loaves or bread rolls.
  4. Place the finished molds on a baking sheet with holes or in a baking pan with holes then bake for 35 minutes. Start 35 minutes timer here
  5. Let finished bread cool and serve while still fresh slightly warm or let cool completely.

Put all ingredients for the wholemeal bread recipe together in a food processor and let it knead intensively with a dough hook for about 6 minutes.

Now transfer the dark dough to a large glass bowl sprinkled with flour and sprinkle again with a little flour. Cover the glass bowl with cling film and let the dough rest in a warm place for at least 50 minutes, until it has doubled in size.

Preheat the oven to 200°C top and bottom heat while shaping the bread dough into either a large loaf, smaller baguette loaves or bread rolls. Flour the finished shaped loaves well and bake on a baking tray with holes or in a baking pan with holes then for 35 minutes.

Let the finished breads cool and serve while still slightly warm. You can either enjoy the breads completely fresh or let them cool completely and even freeze them.
