Today we show you our favorite when it comes to the mixture of creamy and crispy ice cream. Vanilla ice cream is a classic, but we think it’s even better with crunchy chocolate.
Stracciatella is one of those words that means different things depending on where you are standing. In the US it usually shows up as chocolate chip ice cream. In Italy and Germany it means something more precise: vanilla ice cream through which warm melted chocolate has been drizzled and immediately shattered by the cold, leaving paper-thin shards instead of chips.
That distinction is the whole recipe. Chips stay hard and waxy on the tongue; stracciatella shards melt the moment they hit your mouth. The trick is temperature — the chocolate has to be fluid and the base has to be nearly frozen, so the drizzle sets in seconds. Use a good dark chocolate, not chocolate chips, which contain stabilizers that keep them from thinning out properly.

Stracciatella ice cream recipe – vanilla ice cream with chocolate

Instructions
First, pour the whole milk and whipping cream into a cooking pot and slowly heat up.
In a tall mixing bowl, mix the egg yolks, juice of a freshly squeezed lemon, sugar, vanilla extract and dextrose well with a hand blender and add to the warm pan.
Bring the mixture to 83 °C in the pot, stirring constantly, and remove from the heat.
Leave to cool for approx. 50 minutes until the mixture is no longer warm to the touch. Start 50 minutes timer here
Once cooled, pour the mixture into the ice cream maker and chill and mix according to the ice cream maker instructions.
As soon as the ice cream in the ice cream maker has a slightly firm consistency (in our ice cream maker after approx. 5-6 minutes), slowly add the chocolate chips.
Depending on the ice cream maker, the cooling time and production time of the delicious and simple stracchiatella ice cream takes around 10-20 minutes.
Pour the finished ice cream into beautiful bowls and decorate with fresh fruit, sauces or Smarties and other crumbles, if desired, and enjoy.
Tip Tip: The ice cream can easily be stored in the freezer for several days afterwards. Please note: If you want to eat the ice cream again afterwards, it will take a little longer to defrost (compared to ice cream from the supermarket), but it will taste all the better for it.

Really dark dark chocolate for the stracciatella ice cream
The creamy sweetness of vanilla ice cream combined with dark chocolate, which ideally has a cocoa content of 72%-81%. We really like this dark chocolate combination. On its own, this dark chocolate is really very bitter, but in combination with a creamy vanilla ice cream it is simply perfect.
Traditionally, dark chocolate is always preferred in the stracciatella ice cream recipe, as its strong aroma and tart sweetness harmonize perfectly with the creamy base of the ice cream. Ideally, the chocolate should be of high quality to enhance the full flavor and texture of the ice cream.
However, you can also make the stracciatella ice cream recipe with a milky or white chocolate. The result has a milder and sweeter flavor and is very popular with children. However, this differs from the traditional preparation.
