Frozen yogurt in the US went from health food to strip mall self-serve and back again. This strawberry version is the homemade original: yogurt, fresh berries, a little sugar, and nothing else. No churn required if you have a blender and a freezer.

Whole milk yogurt is the one non-negotiable. Nonfat freezes into an ice block because there is no fat to interrupt the crystals. Peak-season US strawberries from June onward have enough sugar to carry the flavor on their own; out of season, frozen berries actually work better than pale supermarket fresh ones and go straight in without thawing.

Ingredients

  • 250 g whipped cream
  • 350 g yogurt plain whole milk
  • 35 g sugar
  • 20 g maple syrup
  • 10 g lemon juice
  • 5 g glucose powder alternatively skip this
  • 400 g strawberries fresh or de-frost frozen strawberries without juice

Instructions

  1. First put whipped cream, yogurt and juice of a freshly squeezed lemon in a tall mixing bowl and mix well with a hand blender.
  2. Then add sugar and maple syrup and mix.
  3. If you want the ice cream to be a little creamier, you can add glucose powder (dextrose). If you don't have any dextrose powder at home, you can skip this step.
  4. Blend the yogurt-cream mixture briefly with a hand blender until a homogeneous mixture is formed and then add the strawberries (without juice when defrosted ones, without leaves when fresh ones).
  5. Now mix the strawberry-yogurt-cream mixture well for about 2-3 minutes until a consistent mixture has formed and there are already slight air bubbles from the hand blender.
  6. Then pour this mixture into the ice cream maker and chill and mix according to the ice cream maker's instructions.
  7. Depending on the ice cream maker, the cooling time and production time of the delicious and simple yogurt ice cream takes around 10-20 minutes.
  8. Pour the finished ice cream into beautiful bowls, decorate with fresh fruit, sauces, chocolate or Smarties and crumbles and enjoy.
Tip Tip: The ice cream can easily be stored in the freezer for several days afterwards. Please note: If you want to eat the ice cream again afterwards, it will take a little longer to defrost (compared to ice cream from the supermarket), but it will taste all the better for it.
